Matcha Tart with a Chocolate Crust | Vegan, Gluten-free

Creamy Matcha Tart | Vegan, Gluten-free

Super creamy filling with a fudgy chocolate crust

Ingredients

Chocolate crust

  • 3/4 cup gluten-free flour
  • 2 tbsp cocoa powder
  • 2 tbsp sugar
  • 1/4 cup margarine melted

Matcha tart filling

  • 1 cup coconut cream see recipe note 1
  • 1/4 cup powdered sugar
  • 1/5 tbsp matcha powder
  • 2 tbsp plant-based milk e.g. soy milk, coconut milk, almond milk

Instructions

Chocolate crust

  1. Preheat oven to 390F/200C.

  2. Add all the chocolate crust ingredients into a bowl and mix with a spatula until well combined.

  3. Press the dough into two 5 inch/12 cm tart tins. Work the dough until it covers the base of the tin evenly and it goes up the sides of the tin.

  4. Bake at 390F/200C for 8 minutes.

Matcha tart filling

  1. Melt the coconut cream by microwaving for about 30 seconds.

  2. Using an electric whisk - whisk the melted coconut cream with the rest of the matcha tart filling ingredients.

  3. Pour the cream filling into the cooled tarts.

  4. Place the tarts into the fridge for at least 6 hours (leaving them overnight would be best).

  5. Dig in!

Recipe Notes

1. Place a can of coconut milk in the fridge overnight. Take it out of the fridge the next day and flip the can over to open it up from the bottom. Tip out the coconut water at the top and you're left with semi-solid coconut cream.
